German Chamomile (Matricaria recutita)

Highly aromatic with a delicate, apple-like fragrance, German Chamomile is a staple of the global herb garden. Known for its dainty, daisy-like flowers and feathery foliage, this variety is the go-to choice for traditional herbal teas. Whether used to soothe a restless mind or calm the digestive system, German Chamomile is as functional as it is beautiful.

Seed & Planting Care

German Chamomile seeds are tiny and require specific conditions to wake up and grow. Following these steps will ensure a lush, productive crop.

  • Sowing Method: Direct sow seeds outdoors in early spring as soon as the soil can be worked. They can also be started indoors 6–8 weeks before the last frost for an earlier bloom.

  • Light for Germination: This is a light-dependent germinator. Surface-sow the seeds by pressing them gently into the soil. Do not cover them with earth, as they need light to sprout.

  • Soil Preference: Thrives in full sun and well-drained soil. It is a hardy, adaptable plant but performs best when kept moderately moist during the germination period.

  • Thinning: Once seedlings have two sets of true leaves, thin them to 8–12" apart to allow for bushy growth.


Growing & Maintenance

  • Growth Habit: Unlike its "Roman" cousin which grows as a low groundcover, German Chamomile is an upright annual that can reach 12–24" in height.

  • Self-Seeding: While it is an annual, it is a prolific self-seeder. If you allow some flowers to go to seed at the end of the season, it will often "re-plant" itself for the following year.

  • Harvesting: For the best flavor and medicinal potency, harvest the flower heads on a sunny morning just after the dew has dried and the petals are fully open.

  • Soothing Tea: Widely used to treat digestive disorders, nervous tension, and irritability. Its gentle sedative properties make it the perfect "nightcap" tea.
