Carrot Microgreens (Daucus carota)

Enjoy the essence of garden-fresh carrots in a fraction of the time! Carrot Microgreens are a hidden gem for the indoor gardener, offering a bright, sweet carrot flavor with a delicate, lacy texture. Their feathery green tops make an elegant garnish for seafood and soups, and they are flavorful enough to be used as a base for a unique, vibrant pesto.


Seed & Planting Care

While traditional carrots take months to mature, carrot microgreens are ready in weeks. Because carrot seeds are small and have a harder outer shell, they benefit from a little extra attention during the germination phase.

  • Sowing Method: Use shallow trays with drainage holes filled with a fine seed-starting mix or coconut coir.

  • Sowing Density: Spread the seeds thickly and evenly across the soil surface. Aim for a dense "lawn" of seeds without them piling on top of each other.

  • Sowing Depth: Carrot seeds are tiny; do not bury them deep. Simply press them firmly into the moist soil or cover with a very fine dusting of soil (no more than 1/8").

  • Patience is Key: Carrot seeds take longer to sprout than broccoli or radish microgreens. Expect to see germination within 7–10 days.

  • The Blackout Period: Cover your tray with a lid or another tray for the first 5–7 days. This keeps the moisture consistent and encourages the tiny stems to stretch.

  • Watering: Keep the soil surface misted and moist during the long germination period. Once they have sprouted, switch to bottom-watering to prevent the delicate, wispy greens from matting together.


Harvest & Quality

  • Harvest Timeline: Ready to harvest in 20–25 days.

  • When to Harvest: Snip with sharp scissors when the greens are 2–3 inches tall. You can harvest them at the "seed leaf" stage, but many growers wait until the first feathery "true leaves" appear for a more decorative look.

  • Flavor Profile: Intense, sweet carrot flavor with an earthy finish.

  • Nutrition: High in Vitamins A, C, and E, as well as minerals typically found in root carrots.


Chef’s Tip

Don't stop at garnishing! Collect a large handful of these lacy greens and blend them with garlic, walnuts, parmesan, and olive oil to create a Carrot Top Pesto that captures the spirit of the garden in every bite.
